My sister-in-law reminded me of this baked goat cheese that I made at one of our parties in 1997 so I thought I would share it with you.
Baked Goat Cheese
1/2 teas. pepper
1/4 teas. dried thyme leaves
1/4 teas. fennel seeds
1/4 teas. paprika
1/8 teas. dried rosemary
1/8 teas. ground red pepper
1/4 cup plain dried bread crumbs
2 Tablespoons olive oil
11-12 ounces soft goat cheese
Crush spices. Toss with crumbs and olive oil. Store until ready to use. Crumble cheese into an 8" round pan, cover and chill until ready to prepare. Sprinkle with crumb mixture. Broil 5-7" from the heat for 2-3 minutes until crumbs are light brown. Serve with crackers.
