I am in hash brown heaven when I make this hash brown recipe. Just wait, you will see. They are to die for hash browns. We have made these several times but the first time was three years ago for Christmas morning and I will never ever forget the first time. I don't even like wasabi, yes, I said wasabi, but I love these hash browns.
The Cheeselady's Wasabi Hash Browns
1 lb. frozen hash browns
3 Tablespoons extra virgin olive oil
1 teaspoon salt
1 teaspoon fresh ground black pepper
12 ounces bacon, diced
1 cup scallions, minced
3 Tablespoons capers
3 Tablespoons sour cream
2 Tablespoons wasabi powder
1 Tablespoon whole grain mustard
Heat the olive oil in a large skillet and cook the hash browns until nicely browned (or cook according to instructions on the package). Season with salt and pepper.
In the meantime, cook the diced bacon until crisp. Drain and set aside.
In a medium bowl, combine the bacon pieces, scallions, capers, sour cream, wasabi powder and mustard. Mix well. Add to the hash browns and cook just long enough to heat through, about 3 minutes. Enjoy!
NOTE: You might want to start with a smaller amount of wasabi powder and adjust to your taste.
NOTE 2: I say, "Live Dangerously", and top the hash browns with a fried egg or two.
